What should I use starting out with Gopher in terms of server
software? I can't get pygopherd to work...

That's a shame, when I tried it a "sudo apt-get pygopherd" was all
I needed. | |

Anyway, this place uses a server called Bucktooth. It's a single
small Perl script, but you also need a super-server like (x)inetd
to manage the networking (I'm using xinetd).

More info on Bucktooth here

I recommend either Motsognir or Gophernicus. Both are written in
C and support server-side CGI and PHP scripting. I also recommend
pygopherd which is written in Python and has Gopher+ support.

And if you would like to self-host, get yourself a Raspberry Pi.
